What Is So Unique About South Indian Kadhi? How Different It Is From North Indian Kadhi?
Kadhi is typically made by mixing besan and buttermilk or dahi. The flavours are then enhanced with different types of tadka, unique to each region. In Punjab, kadhi includes besan pakoda too to add a layer of texture and taste to it.
But South Indian kadhi is totally different from the lot. Here, keeping the yogurt constant, you will have to make various changes in spices and other ingredients. Instead of besan, you will find usage of freshly grated coconut and the quintessential tadka of mustard seeds, red chilli and curry leaves. Besides, it has a runnier texture when compared to other versions, which makes it ideal to have just with rice. On the other hand, you can pair Rajasthani or Punjabi kadhi with roti and paratha as well.
