'World's Best Chef' Guy Savoy Loses Michelin Star

In a move that has sent shockwaves across the global culinary industry, world-renowned chef Guy Savoy has been stripped of a Michelin star. The French chef owns the eponymous Guy Savoy restaurant located in Monnaie de Paris, overlooking the Seine. It received the crowning glory of a third Michelin star in 2002. Moreover, as recently as November 2022, it was named the 'best restaurant in the world' by the Parisian guide La Liste, for the sixth consecutive time. However, the revered Michelin guide announced on Monday that it was downgrading its status to 2 stars. This change will be reflected in the latest edition of the guide, to be published next week.

"These are exceptional restaurants, so you can imagine that these decisions are carefully considered, supported by numerous visits from our inspectors throughout the year," Gwendal Poullennec, head of the Michelin guide, told AFP. "For such important decisions, we include not just French inspectors but also some from other countries," added Poullennec. According to AFP, the move to downgrade restaurants is always hugely controversial, especially since the suicide 20 years ago of Bernard Loiseau - a close friend of Savoy - after his restaurant lost a star. Chef Savoy was reportedly informed of the Michelin guide's decision in a private discussion with Poullennec. Also present was chef Christopher Coutanceau, whose restaurant in La Rochelle is also being demoted.

Savoy owns four other restaurants in Paris and another flagship restaurant in his name in Caesar's Palace, Las Vegas. He has also trained many of the biggest names in global gastronomy, including Gordon Ramsay, who calls Savoy his "culinary mentor," reported Standard.co.uk. In popular culture, Savoy has voiced a supporting character in the French version of the animated hit film, Ratatouille.
The Michelin guide had not downgraded any restaurant since 2019, taking into consideration the difficulties caused by the Covid-19 pandemic. But the guide says downgrades are now necessary if it is to stay relevant, reported AFP. Around 20 French restaurants have also been downgraded from two to one star in the latest edition of the Michelin guide.

To make this smoothie, add milk, peanut butter, a pinch of cinnamon, oats, and sattu powder to a blender. Mix until you get a smooth consistency. Add soaked chia seeds on top and enjoy in the evening.

Milk: Its calcium and vitamin D content stimulate collagen production. They also improve skin tone, according to Manpreet.
Oats: They can help build collagen and reduce skin inflammation because they are loaded with amino acids.
Sattu Powder: Rich in protein, this powder also helps build collagen and improve skin health.
Peanut Butter: Its vitamin E content protects your skin from free radical damage, says the dietitian.
Cinnamon Powder: It enhances blood flow to the skin, thus improving the production of collagen.

2. Buttermilk with Chia Seeds

To make this drink, simply blend curds, water, jeera (cumin) powder and rock salt to make the usual chaas or buttermilk. Top it with chia seeds that have been soaked overnight.

Chia Seeds: They contain omega-3 fatty acids which are known to reduce inflammation and improve skin elasticity, says Manpreet. 
Buttermilk: It is rich in antioxidants that help combat skin damage due to free radicals. It has a detoxifying effect and can help clear up skin blemishes too. 

3. Coconut Water with Gondh Katira

To make this drink, all you have to do is add 1 tablespoon of Gondh Katira to your coconut water. This is a crystalline herb and is also called Tragacanth gum. It is a natural ingredient that has many wide-ranging health benefits.

Coconut Water: This simple organic drink improves skin hydration and elasticity. It can also help you get glowing skin, thanks to its vitamin A, C and K content. 
Gondh Katira: According to Manpreet, Gondh Katira contains mucilage, which is a water-soluble fibre that soothes and hydrates skin.

Holi Recipe: Celebrate Holi With Traditional Gujiya Filled With Khoya And Saffron Bliss

As we step into March, we begin to feel the excitement around one of the much-loved festivals - Holi. Plates and bags filled with colours, water guns loaded with mischief, a mixed playlist of old-new songs, and all those crazy dance moves - what's not to love about this festival? Oh! We missed an essential element. The mouth-watering and absolutely delicious Holi snacks. There is a myriad of snacks prepared but we have one undisputed winner, across the country as well as households - flaky sweet dumplings, Gujiya! 

This traditional Holi sweet is not an uncommon sweet. Various cultures have given their own regional touch by stuffing gujiyas with different delicious fillings. While we love each one of them equally, the classic gujiya has a special place in our hearts. Nothing beats the sinful stuffing of khoya, with a hint of saffron. In case you are planning to prepare these yummy delights right in the comfort of your house, we have got you a MasterChef-approved recipe.

Kesar Gujiya Recipe I How To Make Gujiya For Holi:

Kesar Gujiya Ingredients:

Flour: 2 cups

Ghee - 4tbsp 

Khoya: 2 cups 

Castor Sugar: ½ cup 

Chirongi: 2 tbsp 

Kishmish: 2 tbsp 

Soaked Saffron: ¼ tsp 

Method To Prepare Kesar Gujiya: 

Step 1: Rub flour, and ghee till it resembles bread crumbs. Now, add water and knead to a flat smooth dough. 

Step 2: Time to prepare the stuffing. Heat 2 cups of khoya till it becomes lightly golden and dry. Empty it to a plate and allow it to cool. 

Step 3: Add ½ cup of castor sugar, 2 tbsp chirongi, 2 tbsp kishmish, and ¼ tsp saffron to the khoya. And, mix well. 

Step 4: Make small puris of the dough and place them in a gujiya mould. Apply flour slurry on the edges, and place the stuffing in the centre. Press to seam.

Step 5: Now, heat some oil in a pan. Fry the gujiyas in medium hot oil till they become golden.

Step 6: Leave it to cool and store.
