Homemade Chocolate Brownies Gone Wrong? 5 Mistakes You're Probably Making

Who doesn't love a warm, gooey chocolate brownie? Whether you're cosying up on a cold night or just need a little sweet pick-me-up, brownies are the perfect comfort food. One bite and you are in chocolate heaven, right? But what if your brownies aren't turning out as perfect as you hoped? If they're not as gooey or chocolatey as you would like, you might be making one (or more) of these common mistakes. Here's what to look out for.

Here Are 5 Mistakes To Avoid While Making Chocolate Brownies At Home:

1. Using Cold Ingredients

We've all been there-taking ingredients straight from the fridge and tossing them into the batter. Sure, it saves time, but it can totally mess with your brownies. Cold ingredients don't mix well and can leave you with uneven texture or undercooked brownies. The fix? Let your eggs and butter come to room temperature before mixing them in. Trust us, it makes all the difference!

2. Using Low-Quality Cocoa Powder or Chocolate

Cocoa powder and chocolate are the star players in your brownies, so don't skimp here! Whether you're using cocoa powder or actual chocolate, go for the best you can get your hands on. Look for a high cocoa percentage for that rich, intense chocolate flavour. It'll take your brownies from "meh" to "wow" in no time.

3. Over Mixing The Batter

It's so easy to get carried away mixing the batter, but here's the thing: Overmixing is a rookie move. You might think you're getting the ingredients perfectly blended, but what you're really doing is making the batter dense and chewy. For that gooey, fudgy texture we all love, mix just until everything's combined - no more, no less!

4. Using The Wrong Baking Pan

Not all pans are created equal and using the wrong one can mess up your brownies. Glass pans, for example, can make things cook unevenly because they're thicker. And dark-coloured pans absorb heat faster, which can burn the edges. Stick with aluminium or stainless steel pans for the best results.

5. Digging In Immediately

The brownies are done and the urge to dive in is real, right? But resist the temptation! Right out of the oven, they're still too soft and might fall apart. Let them sit in the pan for a few minutes to firm up before slicing. A little patience goes a long way when it comes to getting that perfect brownie slice.

Making chocolate brownies is easier than it seems - just keep these tips in mind, and you'll bake the perfect batch every time. Happy baking!

New Year 2025: 6 Diet Resolutions You Can Actually Stick To

Happy New Year 2025! With the New Year celebrations comes the promise of starting afresh, especially when it comes to our diets. There are so many people who join gyms or begin new diet plans in the New Year in an attempt to lose weight. One of the most popular new year resolutions is said to be 'I will get fit', but what happens is in fact the opposite. Most of the diets end up crashing and derailing our weight loss goals. What we would suggest is to make simple and achievable resolutions that you can actually stick to. In New Year 2025, the focus should be on setting small goals that can easily be achieved in the short run first and then made into a regular habit.
Consultant nutritionist Rupali Dutta also agrees, "Remember, the first step is the most important! Set smaller goals, for example, closing your kitchen by 9 pm or walking every half an hour of sitting. She further says that it's important to just kickstart a habit and it will undoubtedly become a part of your diet regime. "It takes us 21 days to change a habit and if we follow it for three months it becomes our lifestyle. Take your time, it more important to learn what you must change and make a start," she added.

New Year 2025: Here Are 6 Diet Resolutions You Can Actually Stick To:

1. Eat one fruit every day:

No, we're not saying you should make a fruit platter for yourself. Just the simple act of eating one whole fruit every day will certainly go a long way in your diet plan. Fresh fruits offer a multitude of health benefits for your body. Eat it raw for best benefits. Once it becomes a habit, you can increase the quantity depending upon your other meals.

2. Use smaller plates for eating food:

Sometimes, we end up piling on more food than necessary into our plates. Bigger plates give us the illusion that we still have some more space, while our stomach is already stretched to full capacity. "Even the healthiest food is good till it is consumed in the amounts that the body needs, extra has never meant more goodness," says Rupali Dutta. The simple act of using a smaller plate will prove useful for your diet and weight loss goals.

3. Try to skip processed food every alternate day:

If we heard a recommendation like, 'Avoid processed food entirely' - we may follow it for two-three days or sometimes even weeks. But then all of a sudden, our cravings for junk food returns and we end up bingeing guiltily. Experts suggest that you can try skipping processed food every alternate day to begin with, and then observe the difference. "Avoid factory made food and have what nature has designed," says health coach Shilpa Arora. "Learn about how much you need and then stick to it. The occasional samosa or burger will also not de track you from your health goals if you understand this," adds Rupali Dutta.

4. Switch to herbal tea:

The benefits of herbal teas in detoxifying the system have been proven time and again by various researchers. If you can switch your cup of masala chai or coffee for green tea or any other herbal tea of choice, trust us, your body will thank you! We are not asking ourselves to give it up entirely, but simply incorporate herbal tea into your daily diet at least every alternate day

5. Make one meal everyday a protein-rich one:

In a bid to eat healthy, we often cut down on calories but forget to stock up on good nutrition instead. Rather than saying you will eat less calories or cut carbs completely from your diet, try to make at least one meal a day a protein-rich one. You can choose from either vegetarian or non-vegetarian protein sources. This will provide a simple yet effective means to cut down on calories while keeping you full for longer and contributing to your weight loss goals.

6. Walk for 15 minutes every day:

Apart from the dietary changes, it is also important to incorporate exercise to make sure you shed the excess kilos. Try and walk for 15 minutes every day so that a consistent habit is formed for your daily routine. Once you get the hang of it, you can start taking a longer walk and build up from there. "Complete 10,000 steps daily and get sunlight every morning for best results," suggests Shilpa Arora.

So, try these simple and achievable new year resolutions and tell us your experience in the comments below. Here's wishing all our readers a happy and healthy New Year. May 2025 be your fittest yet!

Can't Travel Without Snacks? Learn How To Make Theplas That Last For Days

Travelling often brings the joy of exploration, but it can also come with the challenge of finding convenient, nutritious, and delicious snacks. For those who can't imagine a journey without some tasty treats, the humble thepla is a game-changer. This traditional Indian flatbread, made primarily from whole wheat flour, spices, and various vegetables, is not only flavorful but can also last for several days, making it an ideal travel snack. Whether you're embarking on a long road trip, a hiking adventure, or a flight across time zones, theplas can be the perfect travel companion.

What Makes Theplas Ideal for Travel?

Theplas are known for their remarkable shelf life, which makes them a top choice for travel snacks. Unlike soft breads or delicate pastries, thepla dough contains ingredients that help retain moisture without causing the bread to spoil quickly. When made correctly, theplas can stay fresh for up to a week, especially if stored in an airtight container.

The key ingredients in thepla include whole wheat flour, yoghurt, oil or ghee, spices like turmeric, cumin, and coriander, and often vegetables such as fenugreek leaves (methi), spinach, or carrot. This combination not only enhances the flavour but also adds a level of nutrition that makes thepla a satisfying and energizing snack on the go.

Thepla made with methi is popular in India

How To Make Theplas In Bulk For Travel

Making theplas at home is straightforward and requires minimal ingredients. Here's a simple recipe that will yield soft, flavorful theplas perfect for travel:

Ingredients:

  • 2 cups whole wheat flour
  • 2 tablespoons sesame seeds (optional)
  • 1 tablespoon caraway seeds (ajwain)
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 teaspoon chilli powder (optional for heat)
  • 1/2 teaspoon salt (adjust to taste)
  • 1 tablespoon oil or ghee
  • 1/4 cup yoghurt (optional, for softness)
  • Water as needed to make the dough
  • 1/2 cup finely chopped spinach, methi leaves, or grated carrots (optional)
  • Oil or ghee for cooking

Instructions:

  1. Prepare the Dough: In a large mixing bowl, combine the flour, sesame seeds, caraway seeds, turmeric, cumin, chilli powder, and salt. Add the yoghurt and a tablespoon of oil or ghee. Gradually add water, mixing until a smooth dough forms. Knead the dough for about 5-7 minutes to make it soft and pliable. If you're adding vegetables like spinach or carrots, incorporate them into the dough while kneading.
  2. Rest the Dough: Once kneaded, cover the dough with a damp cloth and let it rest for about 15-30 minutes. This resting period makes rolling out the theplas easier.
  3. Roll Out the Theplas: Divide the dough into small balls (about the size of a golf ball). Roll each ball into a thin circle, dusting with a little flour as needed to prevent sticking. Aim for a size of about 6-8 inches in diameter.
  4. Cook the Theplas: Heat a tawa or non-stick pan over medium heat. Place one thepla on the hot surface and cook until small bubbles begin to form on the top, about 1-2 minutes. Flip the thepla and cook the other side. Brush with oil or ghee and flip again, pressing lightly with a spatula to ensure even cooking. The thepla should turn golden brown on both sides.
  5. Store the Theplas: Once cooked, let the theplas cool to room temperature before storing. Keep them in an airtight container or ziplock bag for maximum freshness. To prevent them from becoming too dry, you can layer parchment paper between each thepla.

Also Read: 5 Foods To Avoid Eating Before You Board A Flight

Tips for Long-Lasting Theplas

  • Use Oil or Ghee: This keeps the theplas soft and moist for a longer period.
  • Don't Overcook: Overcooked theplas can become hard and brittle, which reduces their shelf life.
  • Add Vegetables Sparingly: While adding vegetables like spinach or carrots enhances flavour, they may introduce moisture. Ensure the vegetables are well-dried or use them in moderation for best results.
  • Cool Before Storing: Always let the theplas cool completely before sealing them in containers to prevent condensation, which can lead to spoilage.

Why Theplas Are Perfect for Travel

Theplas are portable, nutritious, and easy to pack. They provide a good balance of carbohydrates, protein, and fibre, ensuring you stay energized during your travels. Unlike many other snacks that require refrigeration or can become soggy or stale quickly, thepla's sturdy texture makes it a reliable snack for long trips. Additionally, the combination of spices can help with digestion, which is especially helpful if you're consuming them during long flights or road journeys.

Next time you plan a trip, skip the usual processed snacks and bring along homemade theplas. Whether eaten plain or paired with a side of yoghurt, pickle, or chutney, thepla is sure to make your travel experience more flavorful and satisfying.

How To Make Punjabi Chole Masala Powder (And Tips For Storing It)

Punjabi cuisine is loved worldwide for its bold flavours and spices. Whether it's vegetarian or non-vegetarian dishes, Punjabi food has something for everyone. When it comes to vegetarian dishes, favourites like Kadahi Paneer, Dal Makhani, and Chole always make the list. But what really makes these dishes shine is the special masala that gives them that authentic Punjabi taste. If you're a fan of Punjabi Chole, then you know it's all about that spicy, flavourful chole masala. While there are plenty of store-bought chole masalas available, nothing beats the taste of fresh, homemade masala. If you want to level up your chole game every time, making your own Punjabi chole masala powder at home is the secret. Here's how you can make it at home!

Also ReadThis Classic Homemade Pindi Chole Recipe Gets Internet's Approval

What Is Punjabi Chole Masala Powder Made Of?

This masala is a blend of several key Indian spices, including cumin, coriander, cinnamon, bay leaves, black pepper, cloves, dried red chillies, mango powder, pomegranate seeds, and fenugreek seeds. When ground together, they create the perfect powder for your chole dish.

Ingredients for Punjabi Chole Masala:

Whole coriander

Cumin

Black pepper

Bay leaf

Cloves

Whole red chilli

Big cardamom

Cinnamon

Small cardamom

Kasuri methi (dried fenugreek leaves)

Dry mango powder

Pomegranate seeds

How to Make Homemade Punjabi Chole Masala Powder:

Before you start making the masala, there are a few key things to keep in mind to ensure your homemade masala lasts longer and stays fresh.

1. Dry Roast the Spices: Start by drying out all the ingredients. If the sun is shining, place them out for some time to remove any moisture. If sunlight isn't an option, dry roast all the spices in a pan. After roasting, allow the spices to cool completely. Don't ever grind them while they're still hot-it'll mess with the flavour.

2. Kasuri Methi: Adding kasuri methi to the mix gives your masala a special touch. To get the best flavour, roast the kasuri methi lightly-no need to go overboard. Once you've roasted all the spices, turn off the heat and add the kasuri methi to the pan. Stir it around to lightly roast it.

3. Grind the Masala: Now that your spices are roasted and cooled, add them to a mixer jar. For extra heat, toss in 1-2 teaspoons of red chilli powder. Grind everything into a fine powder. Store your homemade Punjabi chole masala in an airtight jar and use it the next time you make chole to bring that authentic taste straight to your kitchen.

Tips for Storing Punjabi Chole Masala Powder:

Choose Glass Jars: Glass jars are the best option for storing your spices. They prevent moisture from seeping in and help keep the flavour intact.

Moisture-Free: Moisture is the enemy of spices, so always use a dry spoon when scooping out the masala. It'll last longer that way.

Cool and Dry Storage: Store your masala in a cool, dry place. Heat and humidity can break down the spices over time, so keep them away from those.

And that's it! See? Making your own Punjabi chole masala at home is super easy, and with these tips, you'll bring some serious flavour magic to your cooking.
