"Dil-Paneer": Diljit Dosanjh Cooks This Special Dish For Diwali Feast

Amid the massive success of his ongoing Dil-Luminati Tour, singer and actor Diljit Dosanjh celebrated Diwali at home with friends by bursting crackers and posting a video of one of his favourite hobbies - cooking. Taking to his Instagram handle, Diljit shared the recipe for his Diwali special dinner. Any guesses? It is a flavourful vegetarian dish, Kadhai Paneer. Before jumping onto cooking the dinner, Diljit shows the diya and rangoli decorations at his place. Next, he shows his kitchen slab full of all the ingredients peeled and chopped for cooking.

To make his special Kadhai Paneer, the global singer takes a kadhai, adds chopped capsicum and onion, cooks for a while and then removes them from the heat. Next, he takes paneer cubes, cooks these too and removes them from the kadhai. Now he adds all the whole spices, roasts them and removes them from the heat. He then adds oil to the kadhai, followed by garlic and finely chopped onions. Next, he adds finely chopped tomatoes and cooks everything together.

The recipe might be elaborate but Diljit's fun commentary makes it all seem simple and fun. He grinds the whole spices and also makes a paste of the previously cooked onion and tomatoes. Now, he adds the paste to the kadhai followed by spices and the sauteed onion and capsicum. He covers it with a lid and finally adds the paneer. The dish is garnished with kasuri methi and coriander leaves.

"Paaji just made the best recipe of Kadai Paneer," a fan wrote. One called Diljit "Michelin Singh chef" while another called the dish "Dil-paneer."

One fan wrote, "Bhaaji can eat all bloggers and vloggers." Another added, "This Paaji and this bhaaji are the only ones who can fix us."

After the Delhi concert, Diljit Dosanjh will next perform a show in Jaipur on November 3, Hyderabad on November 15, Ahmedabad on November 17 and Lucknow on November 22, among others, before concluding in Guwahati on December 29.

Officials Conduct Surprise Inspection At Sarojini Nagar Market To Check For Adulteration Of Sweets

Officials of the Food Safety Department carried out a surprise inspection at the Sarojini Nagar Market to check the adulteration of sweets amid the festive season on Wednesday. Food Safety Officer, Tarun Negi said, "We are carrying surveillance drive-by checking different samples of sweets from different shops. None of the samples has been found adulterated yet. The drive will be carried out throughout the festive season. We are collecting samples from sweet shops only. We have an assistant and lab team with us. The same activity will be carried out a different location. Results will come out simultaneously."

Chemist of Delhi Food Lab, Pinky said, "We are checking different milk-based sweets...A starch test is done to check the adulteration of the sweets." She said that during the Diwali season starch adulteration in milk and milk-based sweets. "We took a sample in a test tube and we mix some distill water in it. We heated the sample and allowed it to cool. Then we mixed iodine solution. After mixing it with iodine solution if starch is present, then a deep blue black colour will appear. This signifies that the sample is adulterated with starch. If starch is absent then you will see brownish colour," she said.

She further said that shopkeepers adulterate sweets with aluminium leaves. "To adulterate they will use aluminium leaves instead of silver leaves. To distinguish between the two we will do chemical testing using concentrated nitric acid test. The silver leaves will dissolve in nitric test but aluminium leaves will not. For consumers, if they take silver leaves in hand they will disappear, but aluminium leaves will not disappear and form a ball like structure," she added.

From South India To Your Table: Discover Unique South Indian Snacks For Diwali Spread

From Tamil Nadu to Karnataka and Andhra Pradesh, Diwali is one of the biggest festivals on the calendar. Just like most parts of India, this is a time for family, friends, faith, fireworks and festivities. It's also a time for Diwali delicacies. Recipe - Kavuni Arisi Murukku

This is a unique twist (Murukku gets its name from the twists) on the classic murukku (chakli), which is made with black rice. Many experts consider black rice (or kavunni arisi in Tamil) a superfood because of the presence of anthocyanin, a powerful antioxidant. Black rice is also rich in fibre and is a source of phytonutrients that cleanse the body. This unique rice varietal adds a unique chocolate brown hue to this murukku:

  • 1 cup black rice (Kavuni arisi)
  • 1/4 Cup gram flour
  • 1 tbsp red chilli powder
  • 2 tbsp ghee
  • 1/4 tbsp Asafoetida
  • 1 tbsp White sesame seeds
  • Oil for deep frying
  • Salt to taste
  • Water as required

  • Wash the black rice. Soak the rice for at least two hours.
  • Drain water and spread it on a cloth; let it dry completely.
  • Grind the black rice to a fine powder in a mixer.
  • Add the powdered black rice, gram flour, asafoetida, sesame seeds, red chilli powder, salt and ghee in a bowl and mix well.
  • Add water as required, and knead it to make a soft dough; add oil and knead again.
  • Use a murukku mould, fill the prepared dough in and press to get the perfect shape as you squeeze it into hot oil.
  • Deep fry till crisp on medium hot oil and flip over to fry both sides evenly.
  •  Drain out the extra oil with tissue paper once it's fried to perfection.Store in an airtight container once it cools down.

Recipe - Ribbon Pakoda

Takes its name from the unique ribbon shape (that you can achieve with the right mould).

Ingredients:

  • 1 cup gram flour
  • 1 cup rice flour
  • 1 tsp asafoetida
  • 3/4 tbsp red chilli powder
  • 1 tbsp sesame seeds (white)
  • 1 tbsp melted butter
  • 1 tbsp oil
  • Salt and water - to taste
  • Oil For deep frying

Method:

  • Mix the rice flour, gram flour, red chilli powder, melted butter, oil, asafoetida and salt in a bowl, and mix well.
  • Keep adding small quantities of water to make a non-sticky dough.
  • Use a ribbon pakoda mould. Fill the dough in the mould and press the dough into hot oil in a circular motion to form a single layer.
  • Flip the pakoda to fry both sides evenly.
  • Drain out the extra oil with tissue paper once it's fried to perfection.
  • Store in an airtight container once it cools down.

Recipe - Karuvapellai Murukku

I first came across this interesting twist to the murukku at Anandas in Coimbatore, one of the city's most popular vegetarian restaurants and sweet shops. Anandas has an array of interesting savouries including a beetroot murukku with its red velvet hues and the karuvapellai (curry leaf) version that incorporates the flavours and goodness of curry leaf.

Ingredients:

  • 1 cup rice flour
  • 1/4 cup roasted gram flour
  • 1/2 cup curry leaves tightly packed
  • 3 green chilis
  • 2 garlic pods
  • 1 tbsp cumin seeds
  • 1 tbsp sesame seeds
  • 1 tbsp melted butter
  • 1/4 tbsp asafoetida
  • Oil for deep frying
  • Salt as required

Method:

  • Add rice flour, roasted gram flour, cumin seeds, sesame seeds salt, and asafoetida in a bowl.
  • Add melted butter and mix well.
  • Grind the curry leaves, garlic and green chilli along with water. Filter it before you add this to the flour mixture.
  • Knead the dough well, cover it with a cloth and set it aside for 5 minutes.
  • Use a murukku mould, fill the prepared dough in the mould and press to get the perfect shape as you squeeze it into hot oil.
  • Deep fry till crisp on medium hot oil and flip over to fry both sides evenly.
  • Drain out the extra oil with tissue paper once it's fried to perfection.
  • Store in an airtight container once it cools down.

Simrun shares that the most commonly found cinnamon in the market is cassia. It looks like bark, has a broader surface area, and is often used as a cheap substitute for cinnamon. According to her, "Cassia has a higher amount of coumarin, which in higher doses can be toxic for your health." She further states that if you wish to reap the benefits of drinking cinnamon water, you must use real cinnamon. But what does real cinnamon look like? Simrun reveals that real cinnamon is smooth on the outside and is rolled from one side to the other - just like a newspaper. It also has a very delicate smell and flavour. She says, "If you are drinking cinnamon water, opt for real cinnamon. If you're making a curry, you may use cassia, but in moderation."

Fans Complain About Poor Food And Beverage Arrangements At Dil-Luminati Concert In Delhi

After all the wait and excitement, Diljit Dosanjh fans in Delhi attended the much-awaited Dil-Luminati concert on Saturday, October 26 and Sunday, October 27, 2024. Pictures and videos of the concert and happy fans were all over social media platforms. However, some fans also expressed their disappointment with the management of the concert arrangement, especially on Day 1. Among other things, one issue that several people raised was poor food and beverage arrangements at the event. An X (formerly Twitter) user posted a picture of a crowded food and drinks stall at the premises. "Terrible arrangements at #DiljitDosanjhconcert in Delhi," the post read. 

When someone asked the user to focus on just the show, she replied, "They confiscated our water bottles at the gate. You mean that paani bhi nahi le [You mean we cannot even get water?]. From 4 pm to 10 pm."

"Attended Diljit's concert, and while his performance was fire, the management was a complete fail," another X user wrote, adding, "Pre-booze is a must because alcohol was sold out even before the show started. Food was okisshly available but that also involved a lot of struggle!" 

A third X user wrote, "Overall, Diljit's performance was great. He's truly a vibe. But the concert experience was poorly organized and definitely not worth the price tag. The management could have been much, much better."

Elaborating on the food and beverage "chaos", the fan continued, "With only 2 counters for a massive crowd, it was Absolute chaos. First, we had to stand in line just to buy a card. Then, another line to get an order slip at the POS, and finally, yet another line to actually get the drink. To top it off, drinks were served in glasses instead of bottles or cans, causing even more delays."

According to the X user, beverages were unavailable after 9 pm. "After a while, a fight broke out between the management and the crowd, leading to the beverage counters being shut down. There were no drinks or even water available after 9 PM."

Talking about not getting any refund for the leftover balance on the card, the user said, "If you added extra money to your card for food and drinks, there was no way to get a refund. Even worse, after the event ended, they only accepted cash and wouldn't take the card. Felt like a total rip-off."

A fan also shared a similar experience in a LinkedIn post. 

"Chaos at food and drinks stalls - You should have arranged adequate facilities so people don't have to stampede to get food and drinks. No separate queue for girls, how do you expect them to get anything in that mess," the user wrote.

Sharing that half of the things were out of stock at the beginning of the show, the fan added, "The cards were prepaid and non-refundable, so if you can't purchase because of this you can't get a refund. At the beginning of the show half of the things were out of stock, why sell if you don't have it? The food stalls closed 30 minutes before the show ended. All representatives of Zomato ran away fearing backlash from the crowd. Drinking water was not available properly."

Diljit Dosanjh will next perform a show in Jaipur on November 2, Hyderabad on November 15, Ahmedabad on November 17 and Lucknow on November 22, among others, before concluding in Guwahati on December 29.

How To Detect If Your Food Contains Contaminants? FSSAI Explains

With frequent headlines about food adulteration to cut costs or outbreaks of infections from contaminated ingredients, ensuring food safety and quality has become a critical concern. By purchasing prepared food or raw ingredients from trusted sources, we can minimise our risk of consuming contaminated foods. Additionally, it is important to follow hygienic cooking, eating, and food storage practices at home. The Food Safety and Standards Authority of India (FSSAI) recently shared an Instagram post discussing different types of food contaminants and how to identify each of them. In the caption, FSSAI wrote, "Clean hands, clean surfaces, safe food! A little care goes a long way in keeping your meals safe!"

Such knowledge can help you remain alert and aware before consuming any potentially contaminated food item:

Here Are 3 Possible Types of Food Contamination as Shared by FSSAI:

1. Physical Contamination

Physical contamination occurs when a physical object enters the food during production or preparation. It can be intentional, as seen in cases of adulterated food products, or accidental due to a lack of awareness. Physical contaminants include any foreign material like stones, stems, seeds, feathers, sand, nails, dust, dirt, straw, hair, etc. Physical objects in food can be a choking hazard and harm your teeth.

How to detect: FSSAI recommends observing the food item carefully, feeling it with your hands, and checking by washing, sieving, etc.

2. Chemical Contamination

Chemical contamination occurs when the food comes into contact with toxic chemicals, leading to potential chemical food poisoning. Preservatives, permitted additives beyond safety limits, pesticide residues, insecticides, reused oil, and cleaning chemicals are all examples of chemical contaminants.

Fresh oil and used oil should not be mixed. Avoid using excessive detergent or sanitizer to clean food preparation surfaces, glassware, dishes, or cutlery. Also, rinse and dry dishes well after using detergent. Use only food-grade plastic and metals for cooking.

How to detect: Look for unusual colour, odour and taste.

3. Microbiological Contamination

Biological or microbiological contamination occurs when food becomes contaminated by living organisms or the substances they produce. Invisible contamination in this case includes bacteria, yeast, protozoa, mould, and viruses, while visible contaminants include flies, worms, cockroaches, weevils, caterpillars, etc.

Biological contamination can lead to foodborne illness. In this case, the disease-causing microorganisms, also called pathogens, get into food and multiply to unsafe levels before being eaten. Bacteria and other pathogens thrive in foods that are moist, high in protein or starch, or neutral in acidity.

How to detect: Observe changes in texture, odour, and colour. Special tests are available for each.

Follow food safety practices at home and avoid eating outside food that seems risky or even doubtful. Stay healthy!
