Guide To Enjoy A Fine Indian Gin This Diwali - Find It Inside

If the 2010s were all about the resurgence of gin, the 2020s are all about the rise and rise of Indian gin. Distilleries that are thinking out of the box, mixologists who are resetting India's artisanal cocktail template, and well-heeled Indian travellers who are back on the road after the brief pause during the pandemic. Indian gins are enjoying the global spotlight like never before. If you're shopping for a fine Indian gin this Diwali season, you will spoilt for choice.

Himmaleh Spirits in the heart of Uttarakhand has just released Kumaon and I, India's first provincial gin with a farm-to-bottle approach. All the botanicals are sourced locally in tandem with farming communities in the region. In May 2023 Broken Bat by Nao Spirits was picked as the Best Gin in Asia at the Gin Guide Awards 2023 The gin makers opted for a process that used Kashmir willow (used for cricket bats) to celebrate India's love for cricket instead of traditional oak barrels.

Origins:

The earliest references to Gin probably go back to the 16th Century. By that time there were many Flemish distillers (in modern-day Netherlands and Belgium) that were distilling Genever, the precursor to Gin with juniper berries. Genever was a common fix for stomach and kidney ailments. The British shortened Genenver to Gin and by the 1700s it became one of the most widely distilled spirits in Britain. The first versions of Genever also used herbs and spices like anise, caraway, and coriander along with Juniper berries.

Types of Gin:

There's no clear classification for gin, this has allowed various interpretations of the spirit to blossom over the years. Strictly speaking, Juniper berries need to be the main flavouring agent for a gin to be classified as a gin but there are quite a few modern gins that don't use juniper berries. Most juniper berries grow in the wild unlike grapes for wine that tend to be cultivated methodically. There is no restriction on the number of Botanicals for flavours - each gin has a different count. Kumaon and I use Himalayan juniper along with 10 other locally sourced Botanicals from the Kumaon region in Uttarakhand. Hapusa is another Indian gin that uses Himalayan juniper. Distilleries today either use the pot still method or column stills and many pot-stilled gins are stored in casks just like whiskey.

There are different types of gins but you're mostly likely to come across a London Dry or Distilled gins. London Dry is arguably the quintessential gin with natural ingredients and flavourings that need to be part of the original distillation process. Flavours and colours are never added after the distillation process. London Dry doesn't necessarily have to be distilled in London. Distilled Gin follows a similar process as London Dry but the flavouring can be added after distillation. Many modern gins follow this process as newer flavouring agents have emerged.

How to enjoy a fine Indian gin

Ansh Khanna and Samarth Prasad, the architects of Kumaon & I, believe that you should never be afraid to drink your gins neat. I agree. We tend to look for cocktail recipes almost immediately after we buy our first bottle of gin. I'd recommend savouring a small measure of gin with a simple tonic or soda water to understand its flavour profile. This allows you to start experimenting with ingredients for your cocktail mix. Once you've done that, try one of the simple Gin and Tonics. G&Ts originated in India as early as the 19th Century and G&Ts have evolved quite a bit over the last couple of decades. Once you've aced a few G&Ts, it's time to try some cocktails. As you understand your flavour preferences, you can also try incorporating seasonal Indian ingredients into your cocktails for a unique botanical journey. I've tried everything from fresh turmeric to Gondhoraj lemon (a popular ingredient in many Bengali homes) to create a unique twist to classic gin cocktails.

  • Garnish: Grapefruit Slice and Golden Hearts
  • Method: Shaken
  • Shake all ingredients and then add ice and shake. Strain it over ice in an old-fashioned glass and splash off the tonic. Garnish with grapefruit and basil leaves.

Ingredients:

  • 50 ml Gin
  • 8 - 10 Torn Mint Leaves
  • 30 ml Cucumber Juice
  • 20 ml Freshly Squeezed Lemon Juice
  • 35 ml Aloe Vera Juice
  • 30 ml Soda Water
  • Add gin, cucumber, and lemon juice along with mint into a glass and gently muddle until a pulpy consistency. Add plenty of cracked ice and churn. Add aloe vera juice, and soda and stir. Add more crushed ice, building into a stack.

Dakota Johnson Was Unknowingly Overdosing On Caffeine Every Day, Here's What Happened

Actor Dakota Johnson felt "creative" and "inspired" while on the set of her directorial debut 'Loser Baby'. She thought the reason behind all this energy was her focus at work, but in reality, it was happening due to an unconscious daily caffeine overdose. How unconsciously? Dakota shared her hilarious experience in a recent interview with Variety. The 'Fifty Shades of Grey' actor revealed that she was regularly consuming a drink which she thought had vitamins, but turns out it was an energy drink, stronger than the popular beverage Red Bull.

It is a beverage called 'Celsius' that gave Dakota that extra push at work. "I discovered Celsius on day one of filming the short," she told Variety. "I didn't know that it was like Red Bull. I thought it was, like, a natural drink."

Talking about the impact of unknowingly consuming excessive caffeine, Dakota shared, "I was like, 'I'm so creative, I'm so inspired, I'm awake all night long, I'm not sleeping, because I'm just thinking-and it's because I was having like two Celsius a day. I thought it was vitamins. I didn't realize I was basically overdosing on caffeine."

It was only later she found out the truth when the film's costume designer Katie Workinger expressed concern about her caffeine consumption.

"'You're basically having, like, four Red Bulls a day,'" Dakota said of what Katie told her. Dakota joked that the drink did help her get through night shoots. How To Make Chewing Gum At Home | Chewing Gum Easy Step-By-Step Recipe

To make chewing gum at home, first, prepare the gum base mixture. Take a microwaveable bowl and add 1/3 cup of gum base, 1/4 tsp of citric acid, 1 tsp of glycerin, and 2 tbsp corn syrup. Microwave it for 1 minute. Stir the mixture after removing it from the microwave. The gum base should be melted, gooey, and sticky. Add 5-7 drops of flavouring to the gum base (traditional bubblegum, chocolate, vanilla, or any other flavour) and mix well.

Next, take a cutting board and pour 1/2 cup of powdered sugar onto it. Make a hole in the centre of the pile. Coat your fingers with a little powdered sugar and add the gum mixture to the sugar. Now, knead them together for 20-30 minutes.

The dough should feel smooth and stiff. The gum should no longer be sticky. If it is, add more sugar. The longer you knead, the more elastic your gum will get, making it chewier in texture.

Once the gum is ready, roll it into a rope and cut it into bite-sized pieces. Your chewing gum is ready! Wrap each piece in wax paper or store them in a resealable plastic bag.

Prepare A Slurry

For the slurry, add besan (gram flour) and salt to a bowl. Gradually add water and whisk well to form a smooth, silky slurry.

Now, slit all the idlis from the centre and stuff them with the prepared potato mixture. Press them slightly to ensure everything stays in place.

Deep Fry The Idlis

Gurugram's Da Susy Pizzeria Bags 86th Rank In The World Top 50 Pizzerias Guide

Indian restaurants are making waves on the global food scene, proving that their talent goes way beyond Indian cuisine. They are blending local traditions with international flavours, showing that they can easily compete with the best in the world. Recently, Pizzeria da Susy in Gurgaon earned the 86th spot in the 100 best pizzerias for 2024. This list was presented by Italy-based media organisation, 50 Top Pizza in an award ceremony held in Naples on September 4, 2024. Reportedly, each pizzeria undergoes a comprehensive review to earn a spot on the list. Nearly 1,000 inspectors evaluate each pizzeria anonymously, assessing food quality, service, wine selection, decor and ambience.

Chef Susanna Di Cosimo, who leads the kitchen at Pizzeria da Susy, emphasizes their commitment to traditional pizza-making. "We use a gas and wood-fired oven and our dough is crafted from imported Molino Caputo flour, which goes through a slow fermentation process at a controlled temperature," Chef Susy explains. Pizzeria da Susy's menu features a wide range of pizzas - from classics like Margherita and Quattro Formaggi to unique creations like spinach, pumpkin sauce, smoked salmon, beetroot, nuts, and 'nduja. 

However, this is not the first time that da Susy has gained recognition for its pizzas. Back in March, the Gurugram-based establishment earned the 13th position on the 50 best pizzerias in Asia Pacific for 2024. At the time, the official website of the rankings page wrote, "This venue today offers a true glimpse of Neapolitan gastronomic tradition. On the menu, you'll find a few appetizers of good quality and pizzas. There's a selection of toppings ranging from classic to slightly more creative."

As for the global pizzeria ranking, the first position was bagged by Una Pizza Napoletana located in New York, USA.
