Watch: Padma Lakshmi Whips Up A Mouthwatering Sandwich Using Leftovers In Seconds

If you follow popular TV host and producer Padma Lakshmi, you will know about her love and passion for food. She was the host of the popular US food competition series 'Top Chef' for 19 seasons and is the host and executive producer of the Hulu series 'Taste the Nation.' While the food in the TV shows may sound fancy, Padma Lakshmi also knows how to make a simple and delicious sandwich for lunch at home, using leftovers. Taking to her Instagram handle, the author and model shared a video in which she makes a yummy-looking sandwich for lunch. Want to know what all went in? Let's take a look.
"It's leftover lunchtime," Padma Lakshmi says as she starts the video. First, she puts some ghee in a pan. Then she puts a slice of bread and spreads some red pesto on it. She tops it with sauteed mushrooms "from the other day when we had mushroom tacos." The next thing that goes in the sandwich is "very hot" minced green chilli from a previous 'chaatchos' recipe (Indian chaat-inspired nachos). She finishes the toppings by adding some grated cheddar cheese and Salame calabrese.

Taking the other slice of bread, she spreads some black olive tapenade (a spread made using olives, capers, garlic, anchovies, lemon, and olive oil). "It's gonna have that brininess," she says. She puts this other bread over the sandwich and cooks from both sides. Padma Lakshmi adds, "I try to make sure I have something spicy, something fatty, something vegetal, and something with a little tartness to it like a pickle. So just a little bit of everything, but not too much because it can get overbearing."

Once the sandwich is cooked and golden brown from both sides, she moves it to a chopping board, slices it into two halves, and enjoys the yummy-looking sandwich. In the caption, she wrote, "Another day, another leftover sandwich. Delicious!" At the end of the video, she adds, "Never made it to the plate."

1. Sprouted Moong Chat

Our age-old Indian wisdom gives us various interesting chutneys and dips made with medicinal herbs and spices. One such dip could be prepared using methi seeds, garlic and coriander leaves. Methi seeds have a high fibre content (50%) and hence help lower cholesterol levels and triglyceride levels in patients with high serum cholesterol, the nutritionist explains. They can be roasted and powdered to mix with garlic and coriander leaves. The diet consultant adds that an intake of 1/2 to one clove of garlic per day has been proven to lower cholesterol levels by approximately 10%. Coriander leaves too support reduction in LDL (bad cholesterol) while improving HDL (Good cholesterol).

4. Moringa Oats Cheela

Moringa (drumstick) is hailed for its medicinal uses and is also great for lowering bad cholesterol, improving good cholesterol, and combating heart disease. Oats have beta-glucan as its major component of soluble fibre, which benefits in lowering cholesterol if regularly consumed, Nutritionist Jain adds.

5. Aliv Seeds Laddu

Aliv/ Halim seeds are healthy for people suffering from high levels of cholesterol, according to the nutritionist. Its regular consumption ensures a reduction of LDL-bad cholesterol. These seeds can be made into laddus- by soaking them with some flax seeds in plain / coconut water for 2 hours. Then they can be combined with jaggery, grated coconut, chopped almonds and other preferences to turn them into a delicious laddu which is full of iron, folic acid, and fibre and super helpful to combat cholesterol.

Distracted eating is associated with anxiety, overeating, and weight gain, according to Harvard. Let's look at the health benefits associated with mindful eating.

  • A 2017 literature review of 68 intervention and observational studies on mindfulness and mindful eating found that these strategies can help slow the pace of eating, promote greater control over eating and recognize feelings of fullness. The findings of the research were published online by Cambridge University Press.
  • A 2015 randomized controlled trial following 194 adults with obesity for 5.5 months studied the effects of a mindfulness-based intervention for weight loss on eating of sweet foods and fasting glucose levels. The subjects were divided into two groups who had to follow a diet-exercise program with or without mindfulness training (including stress reduction, chair yoga, meditation, and affirmations). After 12 months, the mindfulness group showed a decreased intake of sweets and maintenance of fasting blood glucose, as opposed to the other control group.
  • According to a 2021 review published in the 'British Medical Bulletin' journal, mindful eating can help in weight loss by changing eating behaviours and reducing stress.

7 Best Indian Wines You Must Try | Popular Wines To Try

So what are the wine trends for the next year?  Easier to drink, fresher wine, instead of the oaked ones, a growing fascination with local, heritage grape varieties instead of the Merlots and Chardonnays. A huge discussion around soil and how single vineyards translate into taste and finally, possibly, just possibly, the fact that younger consumers across the world may finally be moving away. That hasn't lessened at all in these years, and in India, where the wine culture still continues to be described as "emerging", these solemn games have become much more apparent, most of the times just confusing potential drinkers, who should simply enjoy wine, figure out their own tastes rather than worry about snob values and strict rules of pairing food with wine.

We have always held wine to be an individualistic drink. Most of us drink for pleasure, not as a motorsport. What you drink is most determined by your own individual palate as well as the occasion and the company. You can sit with a solemn glass of red with just a friend perhaps and a book or you can party with a versatile sparkling and enjoy both experiences equally.

1. Fratelli Gran Cuvee Brut:

Some people prefer Champagne to cava or prosecco because of the longer finish and more complexity that you get in at least some of the non-vintages and certainly in the prestige cuvees. But these are expensive wines and not always accessible. If you would like an Indian sparkling, we would unhesitatingly pick up the Fratelli brut. We like dry wines and Fratelli is as dry and sparkling as you can get in India with a delicate and creamy finish. You can even pair it with cheesy pasta or risotto. Or drink it on its own. 

2 . Myra Reserve Shiraz

We met Ajay Shetty, a former banker turned wine entrepreneur and sampled some of the Myra ones. Since then, we have been astonished to see how far they seem to have come. Shiraz is certainly one of the most favourite red varietals, because of its spicy notes that you can feel on the palate. Most (regular, not wine snobs) drinkers of reds in India, we observe, seem to settle for the merlot. Expressions of grapes, of course, differ depending on where in the world (or India) they are coming from. The Myra Reserve Shiraz is oaked and yet it remains fairly easy to drink and elegant. It is generous on the fruit, which most Indians like and is cost-effective too.

3. Krsma Sangiovese

Apart from Shiraz, the other reds people usually end up drinking are the Sangiovese and the Argentinian Malbec. Amongst the offerings from the bigger wineries, wine lovers are quite a fan of what Fratelli is doing. Sangiovese bianco is quite unusual because it is a white wine made from red grapes (only two other wineries do this apparently in the world). It has a structure that comes from a red but is still light and crisp.

6. Grover Zampa La Reserva

For the longest, this has been quite rightly held to be the best Indian red. People like it for its red ripe and spicy aromas - naturally with the shiraz in the blend (cab sauv-shiraz). The tasting proved the consistency of our palate. If you share the same taste, this may be the wine for you too.

Once the brinjals are cut into pieces, season the pieces with salt and place them in a sieve to allow all the moisture to drain out. The brinjal pickle is prepared by flash-frying the ingredients. Flash-frying is a cooking technique in which the food is fried with a little oil at a very high temperature for just a few minutes. This technique helps to lock in the flavour and juices of the ingredients and also prevents too much of the oil from seeping inside the food.

For flash frying the ingredients, just add two tablespoons of oil to a frying pan on high heat, and fry the brinjals for only a few minutes. Take these out and place them on absorbent kitchen towels.
