Every Indian household is feeling the brunt of the tomato price hike. Most of us are reeling under the pressure of cooking without tomatoes. Coming back to besan gatte ki sabzi, this special dish tastes great even without tomatoes. It's the curd and mango powder in the recipe that brings in the tanginess along with freshness. In fact, you don't even need onions, so no chopping!

How To Make Besan Gatte Ki Sabzi Without Tomatoes I Besan Curry Recipe:

Take besan flour, add spices like coriander powder, cumin powder, red chilli powder, salt to taste, asafoetida, turmeric powder and soda. Also, add some oil mix everything together and knead to make soft dough with water. Divide the dough into equal parts, wrap each piece around a clean pencil or a skewer and roll it. Take out the skewer and you'll get cylindrical rolls. Boil each roll and let them all cool down. Then cut the rolls into smaller pieces and fry them till crispy. You can skip frying them if you don't want to.
Now make a special masala by grinding together fennel seeds, green chillies and whole spices like cinnamon, cloves and more to make a coarse paste. Make the base for the gravy by roasting the masala with other spices. Add some curd, stir well, add some water and mango powder and kasuri methi. Cook for some time and then add the besan pieces (gatte). Cook for another few minutes and your gatte ki sabzi is ready.

How To Make South Indian Spicy Ginger Chutney:

Chutney follows no specific rule or recipe; the flavours are usually modified as per your palate. Hence, you would find different variations of this particular dish across the internet. The one we are sharing with you is from Chef Guntas Sethi, shared on her Instagram handle. According to her, "You can add this to any recipe to enhance the flavour or enjoy it on the side, and you'll love it in every way!"
To start with, dry roast chana and urad dal along with jeera and transfer them to a blender. Then, heat oil and sauté onion, garlic, ginger, tomato, Kashmiri red chillies/Bydagi chillies, with some salt. Once the mix softens, transfer it to the blender and blend along with dal and jeera. Finally, add a simple tadka of mustard seeds and curry leaves, and you are good to go!

Is Saffron A Natural Anti-Depressant? See What Experts Say

Thanks to increased awareness, depression is being recognized as a real health issue that demands attention. While medical intervention is often required to manage symptoms like anxiety and insomnia, natural supplements can also help alleviate the problem if not treat it entirely. You'll be surprised to know that many experts and studies talk about saffron being a natural anti-depressant, which can be combined with regular treatment to help fight mild to moderate symptoms.

Is Saffron A Good Anti-Depressant?

Beyond its culinary prowess, saffron has garnered scientific interest for its potential mental health benefits. Recent studies have shed light on saffron's remarkable properties as a natural anti-depressant, offering a glimmer of hope to those seeking solace from the clutches of depression.
Nutritionist Rashi Chowdhary discussed the effectiveness of saffron powder in combating depression symptoms in an Instagram post. She emphasized that depression treatment usually involves a combination of improving gut health, considering therapy, fixing sleep cycles, and having sufficient emotional support from family and friends, which collectively contribute to healing depression. However, Rashi Chowdhary acknowledged that saffron can be considered as an alternative to synthetic antidepressants for the treatment of mild to moderate depression. Nevertheless, she emphasized the need for more research, but it's a promising start.

How Saffron Relieves Depression Symptoms:

Research published in the National Library Of Medicine reveals that saffron may be helpful in treating depressive symptoms. In three studies comparing saffron supplementation to antidepressant groups (fluoxetine or imipramine), significant improvements in depressive symptoms were observed among participants in both conditions.
Rashi Chowdhary also mentioned in her post that research has concluded that saffron can be equally beneficial in treating mild to moderate depression.
1. Crocin extract from saffron has shown an effect in managing anxiety among rats, where 50mg/kg of crocin significantly reduced anxiety rates.
2. In several studies, saffron's effects were found to be similar to antidepressant medications. In a 6-week randomized and double-blinded clinical trial, 30mg capsules of saffron per day showed a similar effect in managing mild to moderate depression among 30 adults.
3. It has been reported that ethanol extract of saffron petals possesses antidepressant activity. An 8-week pilot double-blind randomized trial revealed that 30mg/day of saffron petal extract had a positive effect on mild to moderate depression among 40 adult outpatients.
While these studies give us hope for a natural solution to manage depression, the research is still in the nascent stages. The study published in the National Library Of Medicine warned that "long-term follow-ups are needed before firm conclusions can be made regarding saffron's efficacy and safety for treating depressive symptoms." Nonetheless, the takeaway we get is that if not used for treatment, saffron can be used as a mood enhancer and to reduce symptoms.

1. Chicken sandwich:

Shred a piece of chicken or two, add some gravy to it and boil well to thicken. Then use as a spread to lather a slice of bread and add some cucumber, tomato and onion on the top. Cover with another slice of bread and toast the sandwich well.

2. Chicken paratha:

Much the sandwich spread mentioned above, prepare a mix for paratha with shredded chicken and thick gravy. To it, add flour and prepare a dough. You can add some salt and ajwain for added flavours. Next, cut small roundels, roll them flat and roast well with ghee. And you have chicken paratha ready to be relished.

3. Chicken noodles:

4. Chicken pulao:

Boil some rice with whole cinnamon, cardamom, clove and bay leaf for flavours. Toss the rice in chicken and gravy and serve hot. You can add some ghee for added flavour. Here's a delicious recipe for you.

5. Chicken roll:

Did you know, you can also make a street style chicken roll with it? Prepare a crispy paratha, thicker than usual. Then add some chicken pieces and gravy at the centre. Top with cucumber, onion, green chilli, lemon juice, salt and pepper. Some also like adding some tomato and green chilli sauces to it. Roll it and enjoy.

6. Chicken dosa:

You can also use this chicken as a filling for dosa and give the classic dish a meaty spin. In this case, make sure you add as less amount of gravy as you can.

Soan papdi is one of the most unique Indian mithais. These yellow square pieces have a delicate texture that melts into your mouth as soon as you take the first bite. It is especially popular during festivals such as Diwali and is exchanged between our loved ones. Soan papdi is loved not just in India but also abroad. But apart from its incredible taste, have you ever wondered how soan papdi is made? We recently came across a viral video that shows the making of soan papdi, and it will surely take you by surprise.

The video was shared on Instagram by a handle called @swadishtdelights. In the clip, we could see a group of workers arranging almonds and pistachios on huge trays.
