According to Rujuta Diwekar, the simplest way to include millets in your daily diet is to make a bhakri or roti with it. This nutritious roti can then be enjoyed with y vegetables cooked at home or with a spicy green and red chutney.

Now, making a perfect chapatti can be tough for some with even the ordinary wheat flour. This can get more difficult when you use millets to make rotis. To overcome this, the nutritionist suggests a “kitchen secret” to roll the millet rotis without breaking them. She says - you should use warm water to knead the dough and then press it using your hands before putting it on the pan to cook.

Besides being wholesome, millet roti is super healthy too. Rujuta Diwekar states that millets have a type of Vitamin B called niacin which helps boost energy levels, keeping the digestive tract healthy and maintaining nerve health. Other minerals like magnesium and zinc present in millets can help regulate blood sugar, especially for people with diabetes and PCOD (Polycystic Ovarian Disease).

But always remember, never mix all the millets in one meal; instead eat them one at a time. The nutritionist says that for best results, one can include some chutney and finish the meal with some jaggery and ghee.

Popcorn, by itself, is not a fattening snack and is actually quite healthy for weight loss. Just like makhana, which is popped lotus seed, even popcorn is nutritious and can be consumed even while trying to lose weight through a healthy diet. However, nutritionists caution against eating popcorn that has too much butter or cheese on it. This is especially true for movie theatre popcorn or butter-flavoured popcorn that can be made in the microwave. They contain trans fats, high amounts of calories, artificial flavourings and other components that are harmful to the body. "We should be careful not to choose the butter-laden flavours available in the markets, as this could lead to health problems and prevent weight loss," explains Arora.

Mumbai-based Nutritionist and Lifestyle Educator, Karishma Chawla, also agrees that portion control is important while eating popcorn. "Popcorn is considered a whole grain with a good amount of fibre, hence making it a low GI food. But eating too much of it in one sitting would lead to an insulin spike. Also, avoid the ones with salt and caramel, for obvious reasons," stated Chawla. She also stated that popcorn is a common gut irritant that can lead to inflammation and thus too much of it should be avoided.

This Indian Street Food Restaurant Opened Its First Drive-Thru Outlet In UK

When we talk about drive-thru restaurants, KFC, McDonald's and Starbucks come to mind. The drive-thru concept of international restaurant brands is quite popular in India, but it seems to be going the other way around in foreign lands. A popular Indian street food restaurant chain has opened a first-of-its-kind drive-thru outlet in the UK. This just reiterates how Indian food is gaining popularity overseas. Indian street food already finds immense love in our country; it's exciting to see it getting as much appreciation in other countries, that too by people of different palates. Nothing surprising here though, our street food is so delicious that no one can stay immune to its charm. 

The restaurant that has opened the drive-thru outlet is Chaiiwala. The famous eatery originally started operations in Delhi back in the 1920s and later opened outlets in the UK serving Indian street foods and beverages. With its new drive-thru restaurant on Manchester Road in Bolton, it is sure to bring more fame to Indian cuisine.

Shah Rukh Khan's comeback film 'Pathaan' was released on January 25 and has already crossed several benchmarks at the box office. Co-starring John Abraham and Deepika Padukone, the film is touching new echelons of success every single day. The spy thriller was Shah Rukh Khan's first film after four years, the last one being 'Zero' which was released in 2019. During a media interaction post the film's release, Shah Rukh Khan revealed some interesting anecdotes and behind-the-scenes moments from the sets of 'Pathaan'. He said that John Abraham used to bring a special home-cooked pasta to the sets of the film, that Shah Rukh Khan would detest to the core.

"John ek pasta banate hain. Main soch raha hu sirf apna pizza khau, iska pasta kabhi na khau, [John Abraham cooks a special pasta. I'm thinking to only eat my pizza and never eat the pasta he makes]" said Shah Rukh Khan in the video. He further revealed that he would bring homemade pizza to the set, while John Abraham would offer him his home-cooked pasta. "There was only one thing in the film that went wrong, and because of my love for John, I couldn't say it out loud. But today, I want to speak my heart out," he confessed.

"Bhai woh pasta tu bhi khana chhod de please (stop eating that pasta)," he requested John Abraham sincerely. "Bohot hee alag sa taste hai. Aisa lagta hai ki cardboard ko 20 saal cupboard mein rakha hai aur nikal ke chabana shuru kar diya (The pasta tastes quite different. It feels like it was kept in the cupboard for 20 years, and immediately taken out and served)." said Shah Rukh Khan. Moreover, John Abraham would only eat his home-cooked pasta and nothing else, as Khan revealed. "And that's all he eats! Pasta, pasta, pasta, cardboard, cardboard, cardboard!"

This Kerala-Style Masoor Dal Curry Is Ideal For A Wholesome Meal

Dal defines comfort for every person across India. Pair it with rice or roti, dal makes for a wholesome meal any time of the day. Wonder what is the reason behind such massive popularity? What is parippu curry?

In Malayalam, red lentil or masoor dal is referred to as chuvana parippu (or simply parippu). Parippu curry is a comforting South Indian side dish, usually paired with rice, ghee and some veg side dish. Traditionally, parippu curry is prepared to put together a celebratory meal, especially the ones served on traditional banana leaves (Sadya).

How to make parippu curry?

Here, masoor dal is boiled and mixed with coconut-onion paste and simmered until it turns thick. It is then topped with a flavourful South Indian tadka of curry leaves, mustard seeds and more. To make parippu curry, all you need is a few pantry-staple and not more than 30 minutes. So, without further ado, let's take you through the recipe.

Step-by-step recipe of Kerala-style masoor dal (parippu curry):

  • First, wash the dal and pressure cook with turmeric powder, salt and water.
  • Release heat after 5-6 whistles and whisk until it turns thick and creamy.
  • Now, add grated coconut, green chillies, jeera, onion and water in a blender.
  • Blend into a smooth paste.
  • Pour the boiled dal and the coconut paste in a kadhai.
  • Let it boil together on a medium flame.
  • Prepare a tadka by adding coconut oil, mustard seeds, red chilli and curry leaves to a pan.
  • Add onions to it and fry till golden in colour.
  • Pour the tadka on the dal-coconut curry and you have parippu curry ready to be relished.

Mulligatawny Soup: Is It India's First Soup? What Is It Made Of?

Micro-cuisines need champions. One of the positive outcomes of pandemic-induced lifestyles, particularly in 2020 was the emergence of home chefs and smaller cloud kitchens that championed rare and, in many cases, dying cuisines. Anglo-Indian cuisine is one such cuisine that has seen a declining interest through the 2010s. I still remember my interactions with Bridget White-Kumar in 2012 and again after almost a decade in 2021. She has published multiple recipe books on the cuisine and also manages a popular Anglo-Indian food blog. As one of the custodians of this unique cuisine, she takes comfort in the growing interest in the cuisine in a post-pandemic world where platforms like Instagram have played a significant role in culinary trends.

Just a month ago, Radisson Blu Hotel GRT Chennai unveiled the Ministry of Chutneys, positioned as one of the first restaurants in India to showcase Anglo-Indian cuisine. It's close to St. Thomas Mount, home of one of Chennai's most historic churches and associated with St. Thomas the apostle. The restaurant is also a tribute to the neighbourhood that has long been one of the hubs of Chennai's Anglo-Indian community. Even as many Anglo-Indians have moved to Melbourne, the UK and Canada in large numbers, Anglo-Indian cuisine has relied on colonial-era hotels like the Taj Connemara or clubs like the Madras Club and Madras Gymkhana club to showcase recipes from the last couple of centuries. There's probably no dish representing Anglo-Indian cuisine better than Mulligatawny Soup, with references that go as far back as 1784.

Soups were probably not a thing in 18th Century cuisine. There are quite a few legends about the mulligatawny soup. Most culinary experts agree that the culinary staff at British colonial homes in the erstwhile Madras Presidency might have served pepper rasam as a remedy for the common cold or fever. It's this pepper rasam that eventually became the mulligatawny. The name of the soup is an Anglicised and some might say corrupted version of milagu thani (or pepper water). In many Anglo-Indian homes, rasam was just called pepper water.

The mulligatawny soup in the Madras Club remains my gold standard for this soup. I don't think I've tasted a better version of this soup anywhere else. Also called the 'Ace of Clubs', the Madras Club dates back to 1832 and is India's second oldest surviving club after the Bengal Club, Calcutta. A few years before Madras Club was established, William Kitchiner, a celebrity cook of that era (when you didn't need Instagram to be famous) wrote in 1827 that Mulligatawny Soup had become popular in British households. In 1805 one of the best-known food writers of the time, Maria Rundell published A New System of Domestic Cookery, one of the most popular English cookbooks of the 19th Century. This book included three versions of the Mulligatawny soup.

Executive Chef Kishore helms the kitchen at the Radisson Blu Hotel GRT Chennai. Even as I tried some of the signature Anglo-Indian dishes from the menu at the Ministry of Chutneys like the Mutton Ball curry, our conversation drifted towards Mulligatawny soup. Chef Kishore describes it as a curried lentil soup. His version (see recipe) is cooked with vegetable stock, there's also a version with chicken and chicken stock. This soup is perfect for dinner and is quite simple to make:

Mulligatawny Soup Recipe | How To Make Mulligatawny Soup

What is Mulligatawny soup made of?

Ingredients:

Coconut Oil- 25 ml

Shallots- 20 gm

Chopped Ginger- 10 gm

Chopped Garlic- 5 gm

Green Chili- 2

Turmeric Powder- 5 gm

Curry Leaves- 5 gm

Whole Coriander Seeds- 15 gm

Whole Jeera- 15 gm

Madras Curry Powder- 10 gm

Apple- 40 gm

Celery- 15 gm

Potato- 40 gm

Masoor Dal- 100 gm

Coriander Stem- 35 gm

Coconut Milk- 15 ml

Salt- 15 gm

Boiled Rice- 5 gm

Method:

  • Heat a pan with coconut oil, sweat the shallots, ginger, garlic, green chilli and curry leaves
  • Add all the whole spices and curry powder and cook for 2 minutes.
  • Add the Soaked lentil, potato, apple and coriander stem and sauté them.
  • Add the vegetable stock and simmer till all the vegetables and lentils are cooked.
  • Blend the soup till a smooth puree and pass it through a strainer.
  • Add coconut milk, boiled rice and lime juice and stir it. Garnish with fresh coriander leaves.

Ingredients:

  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3 large ripe bananas, about 1 and 1/2 cups mashed
  • 2 large eggs, at room temperature
  • 1/2 cup packed light brown sugar
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup walnuts, chopped

Method:

1. Preheat the oven to 350 degrees F or 180 celsius. Line a muffin pan with cupcake liners.

2. In a medium bowl, whisk the flour, baking powder, baking soda, salt and cinnamon. Set aside.

3. In a large bowl, mash the bananas. Whisk in the eggs, brown sugar, melted butter and vanilla.

4. Pour the dry ingredients on top of the wet ingredients and continue to whisk until combined. Fold in the chopped walnuts.
